Living Vibrantly - The Perfect Springtime Salad

2487119416_aacdeca1fd_o One of my favorite things to do with food come Spring and Summertime is to mix fresh fruits into salads and snacks. Not only by eating with the seasons do you tend to eat fresher foods, but you become more mindful of what you are putting in your body. You also naturally become more in tune with nature and it's changes throughout the year. Orange Strawberry Salad Ingredients: 1 bunch spinach 1 1/2 cups strawberries (hulled and quartered) 2 small oranges peeled and cut into bite size pieces (white pith removed) 1/2 cup walnuts 1/2 lb fresh asparagus (cut into 1 inch pieces) Directions: Blanch asparagus for about 4 minutes, drain and immediately rinse with cold water. Then refrigerate asparagus for 1 hour. Toss asparagus and all ingredients in a large bowl. I like to add feta cheese, but if you want to keep it vegan you can leave the cheese out. Poppy seed dressing is my favorite dressing for this salad, but a fruity one like raspberry or strawberry vinaigrette also works well. *strawberries, oranges, asparagus and spinach are all spring/ summer fruits and vegetables.
